Séamus Jordan is the founder of Plúr Bakery, based in Borris, Co. Carlow. A former chef turned baker, Séamus launched Plúr in 2021 with a vision to reconnect bread-making with farming and place. The bakery is built on a true soil to sourdough philosophy: he grows organic wheat in the fields surrounding the bakery, mills it fresh on-site using a traditional stone mill, and bakes naturally leavened bread in a wood-fired oven.
This hands-on, closed-loop approach shapes everything at Plúr, from the grain in the soil to the crust on the loaf. The result is bread with depth, character, and a clear sense of origin.
