Lee spent 11 years working his way up the ranks of Fergus Henderson’s St John restaurant Group, taking the position of Head Chef at St.Johns Bread and Wine in 2011. He has travelled extensively cooking at events, fundraisers and guest chef dinners. Notably with Joe Beef in Montreal, Momofuku Shoto in Toronto, The Spotted Pig, The Breslin, Mission Chinese Food in New York, Le Fooding in Paris, Almeni in Italy, The Gelinaz Shuffle in London and Brazil and many more in the UK and abroad. Most recently he was the first chef to “take over” the kitchen and dining room at St John Restaurant in Clerkenwell as part of The Evening Standard London Food Month Festival.
