Founded in 2019 by Jeanette Bryson and Eoin Sheridan, The Dirty Souls is a family-run business built on a love for fire, flavour, and real hospitality. With Jeanette’s 25 year background in hospitality and as an educator, and Eoinn’s hands-on drive, the business has grown into a bold expression of Zwxas & Southern U.S. barbecue traditions — reimagined with Irish produce and purpose. Together with head chef Adam O’Connell, we’ve built something honest, rooted, and ever-evolving.
The Dirty Souls food truck is based at Kinnegar Brewery in County Donegal. In Derry City, you’ll find COUPE by The Dirty Souls, our casual fried chicken and barbecue joint. And back at Kinnegar, we also run Smoke Cult — our barbecue school, where we pass on the techniques, stories, and soul that fuel what we do.
