Originally from Philadelphia and now proudly rooted in Ireland for nearly 20 years, Emily is the founder of Lo & Slo and the fire cook behind Wild & Fired, one of Ireland’s first dedicated BBQ schools. Based at the historic Brook Hall Estate in Derry, she leads immersive, cookery experiences accredited through the Independent Cookery Schools Association (ICSA), blending live fire, local produce, and cultural storytelling.

Her business repertoire also includes an award-winning range of sauces and seasonings, and a street food truck serving bold, barbecued flavours.

Emily contributes to multiple organisations that champion local produce. She was awarded Slow Food NI Person of the Year and is co-chair of the LegenDerry Food Network. Emily partners with quality brands such as Big Green Egg and Weber to run workshops and facilitate grill sales. Her dedication to connecting land, flame, and flavour is in everything she does.
