Head Chef / Owner of London’s hottest barbecue joint Smokestak, Dave Carter will showcase his grown up street food barbecue and wood smoked meats.
Hailing from Barbados, David worked in fine dining as front of house manager at Gordon Ramsey at Claridges and Roka. He left Roka in 2013 and travelled to Houston, Texas to purchase one of David Klose’s world famous pits. David decided on a 4.5 tone version for his Smokestak concept. He quickly became a standout vendor at Street Feast locations and on the UK festival circuit. Fast forward to 2016, Smokestak finally opened its first bricks and mortar restaurant. It was regarded as one of the ‘openings of 2016’ in London, and is now regarded as the best Barbecue restaurant in London. Famous for their brisket, amongst other fire-roasted sides and nose-to-tail treats- we never miss a chance to visit David when we’re visiting London. And neither should you, when he brings Smokestak to Dublin.
David will be cooking smoked lamb belly rib with a fish sauce caramel.
